Easy and Practical Sourdough Discard Recipes

In this section, I will show you some easy and quick sourdough discard recipes. When you feed your sourdough starter, just put the discard in a small bowl, and if you don't want to use it straight away, you cover it and keep in the fridge for up two days.

Sourdough Discard Recipes

To keep your sourdough starter alive, you should feed your new bacterial culture at least once a week, even if you are not planning to bake. Soon you will figure out that feeding your sourdough starter is very easy, and it will get a quick routine.

But what to do with the discard of your starter before feeding it? Well you need some Sourdough Discard Recipes. When I started to experiment with sourdough baking, I threw so much natural leaven in the garbage because I didn’t know what to do with this gluey stuff. But even if it is just water and flour, I always hate the feeling of throwing food into the trash and, it is just not right.

Well, please don’t throw this poor fellow in the rubbish because there is a lot of amazing recipes you can make with your discard. The discard of your sourdough starter is nothing less than a ferment, and you can use it everywhere as natural yeast instead of store-bought yeast.

Quick Savory Sourdough Pancakes

This recipe makes amazingly quick, easy, and utterly delicious sourdough pancakes. I often make this flatbread kind of pancakes during the week in different flavor combinations.

This recipe is so simple and easy, that I didn’t even create an extra recipe sheet. You also don’t need to worry about exact measurements, just follow your instinct.

For this recipe you only need the following five ingredients:

  • sourdough starter
  • chives
  • sesame seeds
  • salt
  • olive oil

When you feed your sourdough starter, just separate the discard in a small bowl for some sourdough discard recipes. Season your sourdough discard with salt and if you want some black pepper. Add the toasted sesame seeds and the chopped chives and mix everything well.

Put a frying pan over medium heat and add some olive oil. When the pan is at temperature, pour your sourdough discard mixture inside. Wait until it starts getting small holes like in the picture beneath and flip it to the other side. Wait until it gets nicely brown and crispy on both sides. – Enjoy

You can try this recipe, with all different kind of flavor combinations. Just mix inside whatever comes into your mind, – Garlic, Chili, Smoked Paprika Powder, Furikake, Curry powder, … just be creative.

Equipment

  • silicone mat or baking paper (for sourdough crackers)

Ingredients
  

  • 200 g sourdough "discard"
  • 20 g olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 pinch dried oregano

Instructions
 

  • If you bake with sourdough at home, there is always a bit of sourdough left over. You can keep this “discard” in a mason jar in the refrigerator instead of throwing it away.
  • Preheat the oven to 160 °C.
  • Mix the sourdough "discard" in a bowl with the olive oil.
  • Spread this mixture thinly with a spatula on a silicone mat (if you don't have one, you can also use baking paper).
  • Sprinkle with salt, freshly ground black pepper and dried oregano.
  • Bake in the oven at 160 °C for about 25 minutes on the middle rack until it turns golden brown.
  • Remove from oven and allow to cool.
